Healthy Treats to Bring to the Ultimate Summer BBQ / Picnic!

It’s that time of the year! With it being summer and the festive season, there are bound to be many BBQs and picnics on the agenda for us Aussies. Here are some healthy and quick recipes to whip up if you are in doubt of what to bring with you. They are all guaranteed to please & impress even the fussiest of eaters!

Holy Guacamole

There are always plenty of chips and crackers to choose from at a picnic but this guac goes beautifully with some organic corn chips. It’s super fresh and the perfect summer dip!

Ingredients:

– 1 organic tomato finely diced
– 1 ripe avocado finely diced
– 1/4 red onion finely diced
– Pinch of salt, pepper and chilli flakes
– Juice of ½ lemon

Method:

Depending on how chunky or smooth you prefer your guac, either finely dice the ingredients and combine them or smash them together in a bowl with a fork for desired consistency.

Summer Salsa

A zesty yet refreshing summer salsa to spice up any picnic!

Ingredients:

– 2 organic tomatoes finely diced
– 1 mango finely diced
– 1 red chilli finely diced
– 1 handful of chopped fresh coriander
– Salt and pepper to taste
– Juice of half a lemon

Method:

Combine all ingredients and mix well. Serve with fresh coriander and lemon on top – yum!

Blissful Beetroot Dip

Everyone loves a good dip! And this one is always a favourite! Make sure you make extra as it’ll be gone in a flash.

Ingredients:

– 1 large roasted beetroot (peeled and chopped up)
– 1 tin of chickpeas chickpeas
– 1 tsp cumin
– 1 tsp ground coriander seeds
– 1 clove garlic
– 1/2 tsp paprika 1 tsp ginger or pickled ginger
– 2 Tbsp tahini
– 1 Tbsp olive oil
– 1/4 cup sauerkraut juice
– 1-2 Tbsp of sauerkraut
– Juice of 1/2 lemon
– Salt and pepper to taste

Method:

Blend ingredients in a food processor until smooth. Enjoy with veggie sticks

Mini Cauliflower Pizzas

These little pizzas are suitable for all the gluten-free and/or keto friends at the picnic! They are full of flavour and don’t leave you feeling heavy and greasy afterwards. They’re a real crowd pleaser!

Ingredients:

For the base:

– 3/4 of a cauliflower head blitzed finely in a food processor, then mix in:
– 3 organic eggs
– 1/4 cup grated organic cheese
– 1 Tbsp Olive oil
– 1/4 cup of lupin flakes
– Add a little water if needed

Toppings:

– tomato paste
– sliced mushrooms
– sliced olives
– sliced red onions
– sprinkle of dried oregano
– fresh basil
– season with salt and pepper

Method:

– Form base into desired sized mini round base and bake in the oven at 200 degrees for about 20 minutes or until lightly golden brown
– Then take out of the oven and put on toppings and bake again for another 15-20 minutes until toppings are cooked to your liking.
– Top with fresh basil and enjoy
