Raw Cacao and Dark Chocolate No Bake Cheesecake Recipe

This raw no bake cheesecake will go down a treat at your next dinner party.

Ingredients

Base: 
  • 3 cups digestive biscuits
  • 6 tbsp cacao
  • Coconut oil 1 cup
  • Coconut sugar
Filling:
  • 1/2 cup cacao
  • 1 tsp vanilla
  • 200 grams 80% Dark Chocolate
  • 100 grams cream or Greek yoghurt
  • Coconut sugar to sprinkle

Method:

1. To make the base, blitz all the base ingredients together until it forms a crumbly texture. Press into a baking dish then set in the fridge for 20 minutes! The consistency of the crumbs should be that they hold together to form dough balls.

2. Heat the chocolate in the microwave for about 2-3 minutes once melted add the cream to a pan and heat gently for about a minute.

3. Once hot add the melted chocolate mixture with the cacao, vanilla, let it cool for about 5 mins.

4. Add the mixture to the base of the baking dish and set in the freezer for half an hour.

5. Sprinkle with coconut sugar, cut some slices and serve!

6. You can also add fresh berries or shaved dark chocolate shards.
